The Fabulous Milk House Appoints New Head Chef

The Milk House in Sissinghurst has announced the appointment of 29-year-old Joshua Price as head chef. The award-winning village pub, which prides itself on its seasonal menus showcasing the best local produce. Offers a range of classic pub fare as well as a more adventurous dining menu, a light grazing menu and wholesome choices for children.

The ambitious young chef, who previously worked as head chef at The Swan & Dog in Great Chart, began his training as an apprentice in the lush green valleys of the Brecon Beacons in his native Wales. Price brings over a decade of experience to the role, alongside culinary inspiration from Spain and France. His achievements include supporting the launch of British food champion Mark Hix’s restaurant at the Belgraves Hotel in Knightsbridge.

Price will be responsible for leading and inspiring a professional kitchen team to deliver the high-quality food for which The Milk House is known. Alongside creating an exciting range of seasonal menus, Price is looking forward to developing The Milk House’s Sunday roast offer.

Price says: “I’m excited to have found a role that will give me the freedom to express myself in an environment where I respect the business vision and values. I’m confident that the owners and I share the same appreciation of good local ingredients. that have been prepared to a high standard and without too much complication in the process. I’m glad to be joining a team with such a strong reputation for good food. But there are always opportunities for improvement. First on the cards, I’ve always believed that the mark of a good pub is its roast. The Milk House is a great pub, so I’m looking forward to developing something special with a bit of a twist.”

Dishes on Price’s forthcoming summer menu at The Milk House (set to launch on Tuesday 13 June) include the following. Grilled langoustines with fennel, smoked lemon and garlic butter, and pomegranate poussin with potato waffle and a red cabbage, spinach and blackberry slaw. Other seasonal local ingredients include cherry blossom, heirloom tomatoes and mini chorizo.

The Milk House’s executive head chef and owner Dane Allchorne says. “We’re delighted that Joshua has joined our team at The Milk House. We believe that great seasonal ingredients deserve respect. Everything from our kitchen is prepared with care and freshly cooked. Joshua is exactly the kind of person we need to deliver this vision and is an asset to our team. He has already demonstrated both technical skill and a passion for food. This being alongside a sense of humour and the ability to cope under
pressure. I’m looking forward to working with him and excited to see how our kitchen will develop.”

This announcement follows the recent launch of The Barrow House in Egerton, Dane and Sarah Allchorne’s second venture. The new inn, which opened in September 2016 on the date of The Milk House’s third anniversary. Named after a Bronze Age barrow in the village. The company has plans to grow its portfolio further in the next few years.
